We take great care in preparing your meats, going the extra mile to ensure quality. Our selection includes many cuts that are no longer commonly found in markets. We hand-tie our roasts to ensure they remain moist and juicy. With our extensive knowledge of cuts from around the world, we encourage you to explore something unique and we will do our best to accommodate your requests. In the near future, we plan to introduce an international line of burgers, along with value-added items such as stuffed pinwheels, rubs, marinades, fajita seasoning, and seasoned standing rib roast.
Smokehouse
This is where we truly distinguish ourselves from others. We offer a variety of cuts perfect for smoking. You can still use Grandma's bean recipe, but with our smoked beef, sheep, or goat shank or neck bones. And for those delicious BLTs, try our Buckboard bacon. Our cured and slow-smoked Lamb Ham is a favorite, even among those who typically don't enjoy lamb.

Currently, we provide three types of smoking wood: Hickory | Pecan | Maple.
In the future, we plan to add Mesquite and Applewood, as certain woods complement specific meats better. We can discuss this during the ordering process.

We also offer two types of cure for your smoking needs: a Brown Sugar Cure and a Maple Sugar Cure, with the addition of a Honey Sugar Cure planned for the future.

Fresh & Smoked Sausages
We have been blessed over the years with a wealth of sausage recipes. At Aleph Mem Tav, we offer a greater variety of sausages than anywhere else. While most slaughterhouses typically provide only 1 to 3 types, and most meat markets may offer around half a dozen, we proudly present over 20 types of sausage. We offer these in both bulk and linked formats, using sheep and beef casings for our linked sausages.

Old Fashioned Corned Beef
At Aleph Mem Tav, we are delighted to offer traditional, old-fashioned Corned beef. We take fresh brisket, cure it with spices, and place it in barrels, just as your great-grandparents did. We allow it to pickle for 10 to 12 days, then wrap it in pickling spices to ensure exceptional flavor. Nothing beats a homemade corned beef Reuben sandwich!
Homemade Smoked Pastrami
We are excited to offer homemade pastrami! Our butcher will take your choice of top round, bottom round, short plate, or brisket and pickle it using our traditional corned beef recipe. After a pickling period of 10 to 12 days, the meat is carefully removed from the barrel and hand-dried. We will then coat it in our special pastrami seasoning and slow smoke it to perfection. We can leave it whole for a roast or slice it for sandwiches, depending on your preference.
